Honey-Mustard, Chicken Breasts
4 chicken breast halves, skinless and boneless
1 cup bread crumbs
7 tsp. Dijon mustard, divided
3 TB honey
3 TB butter
Fresh parsley, chopped, as garnish
Pound and flatten chicken to 1/4" thickness.
In a shallow bowl, combine bread crumbs and 1 teaspoon mustard.
In another shallow bowl, combine remaining 6 teaspoons mustard and the honey.
Dip flattened chicken in the honey mustard mixture and the coat with the
bread crumbs.
In a nonstick skillet over medium heat, saut chicken in butter until juices
run clear, about 8 minutes.
Garnish with the fresh parsley, if desired.
Serves: 4.
